Heading out of town this weekend left us with very options left to create any sort of meal last night (besides oatmeal & peanut butter, of course). I’ll give you one guess where we headed to…
…Boulder. Duh.
1) Using up a Mad Greens Coupon – buy one get one free! – left us with this delicious dinner. Vegetable Panini for her:
Portobello mushrooms, artichoke hearts, onions & jack cheese melted for savory satisfaction. Plus a roasted red pepper dipping sauce on the side, that will definitely be recreated in the Kitchen de Moi.
2) Rather than roaming the Pearl St Mall, yet again, I had another idea. Drive up Flagstaff road for a sunset hike/photo shoot. Why not treat the camera to a little adventure, too? She deserved these treats:
Where’s my (nonexistent) Mountain Bike when I need it?!
It’s on the market… just slightly out of our budget. Maybe if I cash in the camera?

3) We instated a “No Fro-Yo buying” rule for the month of September. Trust me, it was necessary. To switch things up, we squeezed into the Chatauqua Dining Hall to check out their dessert menu and enjoy the porch while it’s still nice out.

We snatched the last Peach & Apple Crisp (a la Mode, please). No question why these went quickly – Fresh Peaches & Soft Vanilla Bean perfection.

With that, I was properly fueled for an easy 5 mile run this a.m. before we pack and hit the road! A trip down to NM is in store for our Holiday weekend – how are you spending the last days of summer?

We are heading to Austin for this holiday weekend to spend time in our favorite city and attend a friend’s wedding!

No fro-yo?!? Have you made David Leibovitz’ frozen vanilla yogurt? Fast, easy, cheap, 3 ingredients! and hardly even bad for you, just a bit o’ sugar . . . all you need is an ice cream maker which can be had for nominal cost. Let me know if you want the link!
I make “Banana Softserve” every now and then – frozen banana chunks in the Food Processor. SO easy and delicious! Peanut butter and some chocolate may find their way in sometimes too.

Summer seems to have already dissapeared here, Alberta Canada, fall is setting in which is terrifying because it usually only lasts a month or so, then the snow starts falling. The dogs are excited though, they love the snow : ) Have a fabo weekend!!
